Method:
To make the relish, combine all ingredients, except pork and oil, in a medium bowl. Cover and refrigerate until needed.
Preheat your grill to medium-high. Lightly oil the grill. Season the pork chops with salt and pepper, and then grill 3 to 4 minutes per side, or until cooked through.Plate and serve the chops with a generous spoonful of the relish.
Note: If apricots are not available, you can substitute with plums for this recipe.
What to serve alongside:
For a summer meal, serve the pork with a side salad you create from a recipe in our website recipe collection, such as Butter Lettuce Vinaigrette with Blue Cheese and Walnuts or Leaf Lettuce Salad with Creamy Chive Dressing, Bacon Bits and Tomatoes.
Options:
Instead of pork chops, try serving the relish with another type of grilled meat, such as veal chops or chicken breasts. Or, trying serving it with grilled fish, such as salmon. For spicy relish, mix in one small, finley chopped jalapeño pepper.
