Method:
Place the lemon juice in a salad bowl. Whisk in olive oil, honey, garlic and mustard; season with salt and pepper. Add the spinach and toss to coat. Divide the spinach among chilled plates or bowls. Garnish top with cantaloupe, bacon and pine nuts and serve.
